what’s been brewing + save the date

What’s been brewing is sourdough starter. For the last 7 months Grant has been working on a wild yeast culture, aka sourdough. He has been testing flours, playing with hydration levels, altering fermenting times, trying different shapes & scorings, discovering the subtleties of the new stone hearth oven, tweaking recipes and techniques to come up with what we feel is a pretty darn good loaf of bread. We’ve held off announcing anything until the bread is ready. Sooooo…..

Prairie Boy is proud to announce the opening of our new artisan bakery. We are located at 221 Sorauren avenue in the Roncesvalles neighbourhood of Toronto.

The bread business will be called Prairie Boy BreadThe bread will be available as part of the pre-existing cafe menu and also for retail purchase.

Our bread is made from three ingredients – flour, water and sea salt.

We use organic flour grown and milled here in Ontario, very high hydration levels, and a natural wild yeast culture. To start, we will have three breads available daily.

– a country white bread made from hard fife and soft winter wheat

– a whole wheat made from stone ground whole grain

– a classic baguette.

In keeping with french tradition, our baguette has baker’s yeast as well as a sourdough leaven to create that Paris circa 1930’s style.

Bread will be available Tuesday-Saturday at noon, starting Sept 3, 2013

There will be limited quantities baked daily to maintain high quality.

GARLIC: Our organic garlic did great this year. It’s amazing what a little rain can do. It is currently curing in order to have some shelf life but it should be ready in the next week or so. The bulbs are quite big this year and very flavourful. We are selling it for $2.50/bulb with a minimum 20 bulb order. Please let us know how much you would like so we can set it aside.

SAVE THE DATE:  The bakery/cafe space will also be the home for our next Prairie Boy dinner. The next dinner will be September 20, 2013, 7:30 pm. The menu is still in the planning stages but will be 4 courses. Tickets are $85, wine pairings and gratuity included.  Trust that it will be local, organic and delicious!
